Today I did asimple meal for lunch. Brown rice and black beans with lots ofpurple and green olives. And a simple salad made with tomatogarlic and onions. Man, you can’t beat that. I got totell you, it feels so good to eat Vegan. It feels like yourbody and Soul is in Peace. Wow, it feels so great.

Now, who said vegan do not eat right? All this with vegan chipotle sauce. I am still tasting it. :-)
This is a plate which is known by the popular name in Peru as “Lomo Saltado”. It is made out of french fries, beef, onions tomatoes soy sauce, cumin, garlic and black pepper. Obviously I did not have beef but TVP which my wife made for me. Oh my goodness, this was so good that I belied I was having a religious experience. I never thought vegans can eat so good. This is not mentioning the avocado tomato and olive salad. This olive is well known in Peru, it is not the green olives that we have in the States. It was really good.
I was feeling hungry, so I thought what about putting a quick meal. U cooked my Garlicky Quinua, also lentils. And tomatoes and avocado salad. As u can tell I love avocados. :-) I got to tell you, it was good. :-)
So, my wife was about to go to work and she mentioned how much she liked the chop chop that I made for her not to long ago, she would like me to make another one. Well, it just happened that I ran out of rice, so what can I do? Lucky for me, I had spaghetti with Pesto( lots of spinach). I followed the same principle, put the Spaghetti at the bottom, veggie meat (TVP) on top, and a salad of tomatoes one piece of garlic and avocado. Oh my goodness. It seems that my wife was making love to the food. She was like hmmmm, hmmm. I hope you like it.
So, I keep making my post about what I am eating lately as a vegan. And for lunch I decided to eat something kind of light. If I can call it that.
I remembered that I made some Rosmery bread and I had not eating it. So I thouht about why not eat BBQ Tofu that I made earlier with the Rosmery bread?
So, I quickly took a couple of slices and add some Veganise, or what ever the name is for the grape seed mayonnaise. I also cut a couple of tomatoes’ slices to go with the bread and added the BBQ Tofu in between the slices. The sandwich was so good, I am still tasting it a day later. :-P
I also added some chips to go with it, as you can see in the picture. Overall, I tgink it was a good fast food for lunch.
I was thinking about what am I going to eat for supper tonight. So, thinking about it, I said to myself, why not vegetable Chinese noodles? I mean it is a good dish as any, and it would give a nice break to rice. Nothing wrong with eating rice, but I thought it would be awesome to duplicate the Chinese egg noodle dish with spaghettis, probably whole wheat and eat them with green onions and vegetables like carrots among other veggies.
What inspired me to come to this conclusion? A video that I was watching on Youtube. You can find it here: http://www.youtube.com/watch?v=Br-sIMrQ_LA&NR=1. So, since it seems easy to duplicate, why not cooking some. :D I will probably eat it with the Barbecue (BBQ or Bar B Q) Tofu that I made yesterday. So, that does not sound that bad. That is what I will be eating tonight. :D
